The trouble with sequels is that you loose the element of surprise. As surprise was the main element of Hostel, you find this sequel to be a tad unrewarding. That's not to say that there aren't good bits (the climax is great) but it's a bit like the second half of a glass of beer.
If you want a scary movie series with sequels that are as good as the original the see Saw, Saw 2 and Saw 3.
